Caramel-Apple Bread Pudding

Caramel apple bread pudding

Makes 8 servings.
One serving: calories 200; fat 1g; sodium 240mg; carbohydrate 43g; protein 5g

Ingredients:

1 cup unsweetened applesauce
½ cup packed brown sugar
1 cup skim milk
½ cup fat-free, cholesterol-free egg product
1 teaspoon vanilla extract
½ teaspoon ground cinnamon
5 cups 1-inch cubes French bread
½ cup fat-free caramel topping, warmed
 


Instructions:

  1. Preheat oven to 350 F.
  2. Spray a 9-inch pie plate with cooking spray.
  3. Whisk all ingredients except bread and caramel in a large bowl until smooth.
  4. Fold in bread.
  5. Pour into pie plate.
  6. Bake 40 to 45 minutes or until golden brown.
  7. Cut into wedges.
  8. Drizzle with caramel topping.
